Ultimate Chocolate Chip Cookies

These cookies are a firm family favourite.

Ultimate Chocolate Chip Cookies

Ingredients

10 oz (285g or 2 1/4 cups) Plain Flour (all purpose)

2 oz (55g or 1/2 cup) Cornflour (cornstarch)

2 tsp Baking Powder

1 tsp Bicarbonate of soda (Baking soda)

6 oz (170g or 3/4 cup) Butter (chopped)

4 oz (113g or 1/2 cup) Golden Caster Sugar

2 oz (56g or 1/3 cup packed) Soft Light Brown Sugar

8 oz (225g or 2/3 cup) Golden Syrup (Corn Syrup)

11 oz (300g or 2 cups) of your Favourite Chocolate Chopped or Chocolate Chips.

Method

Heat the oven to 190C (170C fan, Gas Mark 5, 375F)

Mix together the flours, baking powder and bicarbonate of soda.

Rub in the butter until the mixture resembles breadcrumbs.

Stir in the two sugars.

Next mix in the golden syrup followed by the chocolate.

Put golf ball sized lumps of dough spaced out on a cookie sheet.

Bake for 8-10 minutes until nicely golden.

If you wish to neaten the shape, as soon as they come out of the oven, you can place a slightly larger cup or deep lid over each cookie and spin it in a circle to shape them.

Leave to half cool and firm up a bit before transferring to a wire cooling rack.

Store in an airtight container for up to one week or freeze for up to three months. The dough can also be frozen.
